Vegan fresh cheese


Delicious on toasted bread, enjoy it on all occasions: as an appetizer, a starter, a dessert…

And it comes freely flavored according to your desires and taste: you may add some seeds, herbs and spices…


For 1 cheese

  • 100g (31/2 oz) of cashews
  • 1/2 lemon juice
  • 3 tbsp of water
  • 1 tsp of garlic powder
  • pink pepper
  • chives
  • pepper
  • fleur de sel

Place the cashews in a bowl and cover with boiling water. Let soak for at least two hours, then drain.

Add 3 tbsp of water, the lemon juice, the garlic powder, some pepper, one or two pinches of fleur de sel and about 2 tsp of pink pepper. Finely mix. Add chopped chives and store in the fridge.

Serve on a slice of toasted bread, with a few drops of lemon juice and/or olive oil and sprouts.
