Passion fruit dessert cream

Coming directly from Brazil, here is a fast and easy recipe, with a deliciously exotic taste… (But it will never help your bathing suit to fit you…)

 

For 6 to 8 people

  • 300ml (11/4 cup) of condensed milk
  • 300ml (11/4 cup) of liquid cream
  • 600ml (21/2 cups) of passion fruit juice
  • 3 passion fruits
  • 2 gelatin sheets

Soak the gelatin sheets in cold water.

In a saucepan, place the passion fruit juice over high heat until reduce by half, in order to obtain 300ml (11/4 cup) of concentrated juice.
Add the gelatin sheets in hot juice and let cool.

In a blender, mix the concentrated juice, the liquid cream and the condensed milk for a few seconds.

Pour the preparation into small containers and keep in the fridge for at least two hours.

 

Just before serving, add some passion fruit seeds on the top of each small jar.
