Or Rapadura (according to its denomination of Brazilian origin) denotes pure dried sugar cane juice, filtered and then crushed which has not undergone any transformation or refining. It comes from organic farming and keeps nutrients, minerals, vitamins and amino acids. It has a higher moisture content than sugar, a little less calories and a small taste of caramel licorice. On the other hand, just like xylitol, it does not give a good result in the realization of pie pastes. In pastry, its dark color can give a less appetizing hue to certain preparations.
