Figs and goat cheese thin pie

Season of the figs is coming!!! Thin, creamy and crispy, this light pies is a delight for all the palates, including children ones (tested and approved!).

It will also brighten you up until the fall…

 

For 1 large pie or 8 individual ones

  • 1 puff pastry
  • Fresh goat cheese
  • 6 or 7 figs
  • Olive oil
  • 2 rosemary sprigs
  • 100g (31/2 oz) of walnuts
  • 2 tsp of maple syrup
  • Fleur de sel

If you prefer individual pies, cut the puff pastry in 8 circles, using a cookie-cutter.

Place the puff pastry on a baking paper sheet.Brush it with olive oil.

Sprinkle with a pinch of fleur de sel.

Spread the fresh goat cheese on the puff pastry (2 or 3 tbsp, according to your taste).

Arrange the figs cut into slices.

In a bowl, mix the coarsely crushed walnuts and the chopped rosemary with the maple syrup and a tsp of olive oil. Drop the mix on the pie.

Cook in oven at 180°C (350°F), for 20 to 25 minutes, until the pastry is golden brown.

Serve lukewarm with a salad, as a starter or a main course.

 

Tip : garnish with clover flowers.
