{"id":2805,"date":"2018-03-23T19:44:56","date_gmt":"2018-03-23T18:44:56","guid":{"rendered":"https:\/\/les-petits-bonheurs.com\/?p=2805"},"modified":"2025-05-11T17:45:36","modified_gmt":"2025-05-11T15:45:36","slug":"crostini-with-morels","status":"publish","type":"post","link":"https:\/\/les-petits-bonheurs.com\/en\/2018\/03\/23\/crostini-with-morels\/","title":{"rendered":"Crostini with morels"},"content":{"rendered":"<p>With the Spring comes along this short magic moment that never lasts enough: the season of morels.<\/p>\n<p>Every year it reminds me of my childhood and gathering during the country week-end, the long walks near the forest, before my grand-mother cook them at night\u2026<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<div class=\"csRow\">\n<div class=\"csColumn\" style=\"margin: 0px; padding: 0px; float: left; width: 37%;\" data-csstartpoint=\"0\" data-csendpoint=\"355\" data-cswidth=\"37.0%\" data-csid=\"bba6f5a5-5274-4906-b926-1d10c4832226\">\n<p><strong>For 2 people<\/strong><\/p>\n<ul>\n<li>250g <em>(8 oz)<\/em> of fresh morels<br \/>\nor 60g <em>(2 oz)<\/em> of dried morels<\/li>\n<li>1 stock cube<\/li>\n<li>150ml<em> (2\/3 cup)<\/em> of port wine<\/li>\n<li>200ml <em>(1 cup)<\/em> of liquid cream<\/li>\n<li>1 egg yolk<\/li>\n<\/ul>\n<\/div>\n<div class=\"csColumnGap\" style=\"margin: 0px; padding: 0px; float: left; width: 1.04%;\"><img decoding=\"async\" style=\"border: none;\" src=\"https:\/\/les-petits-bonheurs.com\/wp-content\/plugins\/advanced-wp-columns\/assets\/js\/plugins\/views\/img\/1x1-pixel.png\" \/><\/div>\n<div class=\"csColumn\" style=\"margin: 0px; padding: 0px; float: left; width: 62%;\" data-csstartpoint=\"365\" data-csendpoint=\"960\" data-cswidth=\"62.0%\" data-csid=\"340f1ef8-f6d7-ab72-8626-b0fdfc3caccb\">\n<p>If the morels are dried, rehydrate them in a hot water and milk mix for 1 to 2 hours.<\/p>\n<p>Wash them very carefully because they might contain some sand and cut the biggest ones. In a pan, briefly stir the morels in a little bit of butter (or <a href=\"https:\/\/les-petits-bonheurs.com\/en\/ghee\/\" target=\"_blank\" rel=\"noopener noreferrer\">ghee<\/a>), then add a little bit of water and the stock cube.<\/p>\n<p>Morels must be cooked long enough because they aren\u2019t edible when they are raw.<\/p>\n<p>Simmer over low heat adding some water regularly for at least half an hour. Then let the water boil away. Add the Port wine. Reduce and add the cream. Reduce a little bit more and remove from heat. Wait for 1 or 2 minutes, add the egg yolk and mix.<\/p>\n<p>In the plates, spread the morels on slices of bread that were browned in a frying pan with a little bit of butter beforehand.<\/p>\n<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>With the Spring comes along this short magic moment that never lasts enough: the season of morels.
