It\u2019s a happy days sweet, a childhood memory, a fleeting pleasure. This time the recipe is from my cousin, and it\u2019s such an emblematic one that from now on, acacia are called fritters trees.<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<div class=\"csRow\">\n<div class=\"csColumn\" style=\"margin: 0px; padding: 0px; float: left; width: 37%;\" data-csstartpoint=\"0\" data-csendpoint=\"355\" data-cswidth=\"37.0%\" data-csid=\"8eb6977f-3b39-1e85-982a-1e9f343e627a\">\n<p><strong>For 1 large salad bowl of fritters<\/strong><\/p>\n<ul>\n<li>1 large salad bowl full of acacia flowers<\/li>\n<li>500g <em>(4 cups)<\/em> of all-purpose flour<\/li>\n<li>4 eggs<\/li>\n<li>250ml <em>(1 cup)<\/em> of milk<\/li>\n<li>250ml<em> (1 cup)<\/em> of beer<\/li>\n<li>1 pinch of salt<\/li>\n<li>4 tbsp of vegetable oil<\/li>\n<li>8 tbsp of granulated sugar<br \/>\n(or 6 tbsp of <a href=\"https:\/\/les-petits-bonheurs.com\/xylitol\/\" target=\"_blank\" rel=\"noopener noreferrer\">xylitol<\/a>)<\/li>\n<li>1 packet of baking powder<\/li>\n<li>Cooking oil<\/li>\n<li>Icing sugar<\/li>\n<\/ul>\n<\/div>\n<div class=\"csColumnGap\" style=\"margin: 0px; padding: 0px; float: left; width: 1.04%;\"><img decoding=\"async\" style=\"border: none;\" src=\"https:\/\/les-petits-bonheurs.com\/wp-content\/plugins\/advanced-wp-columns\/assets\/js\/plugins\/views\/img\/1x1-pixel.png\" \/><\/div>\n<div class=\"csColumn\" style=\"margin: 0px; padding: 0px; float: left; width: 62%;\" data-csstartpoint=\"365\" data-csendpoint=\"960\" data-cswidth=\"62.0%\" data-csid=\"5878ec33-8e16-358e-93b1-22de4cc93b27\">\n<p>Separate the flowers from the stems. Set aside.<\/p>\n<p>&nbsp;<\/p>\n<p>Put the flour in a large bowl and make a well in the center. Add the egg yolks and start mixing. Then gently add the milk, the beer, the pinch of salt, the vegetable oil, the granulated sugar (or <a href=\"https:\/\/les-petits-bonheurs.com\/xylitol\/\" target=\"_blank\" rel=\"noopener noreferrer\">xylitol<\/a>) and the baking powder. Mix until forming a homogeneous and smooth paste.<\/p>\n<p>Beat the egg whites until firm and stir in the batter.<\/p>\n<p>Then add the flowers and mix gently.<\/p>\n<p>Cover with a clean kitchen towel and leave the batter to rest for 1 to 2 hours.<\/p>\n<p>&nbsp;<\/p>\n<p>With a tea spoon, form small balls of paste, and fry them in boiling cooking oil until golden brown.<\/p>\n<p>Drain on paper towels.<\/p>\n<p>Sprinkle with icing sugar before serving.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Variation:<\/strong> With only 1 tbsp of sugar (instead of 8), you may have \u201csalted\u201d fritters to go with a salad, for example.<\/p>\n<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>The smell is heady, the taste is delicate.
