Acacia flowers in tempura

Hurry ! It’s the season and it won’t last…!!

Super easy and lighter than flower fritters, but equally perfumed, no one can get tired of it…

 

For 8 to 10 people

  • 450g (15 oz) of acacia flowers
  • 1/2 l (2 cups) of white beer
    (for the citrus notes)
  • 270g (2 1/8 cups) of flour
  • 4 tbsp of sugar
  • Icing sugar
  • Frying oil

Remove stems and leaves and gently wash the flowers in cold water, drain them and let them dry on a clean cloth to get rid of unwanted insects.

In a large bowl, pour the beer, add the sieved flour and mix. Add the sugar and mix again, until smooth. Pour the flowers and mix.

Fry in hot oil, drain on paper towels and sprinkle with icing sugar.

Enjoy lukewarm.
