Ok, it’s not the healthiest thing to eat, it’s a bit greasy and sugary, but it’s so delicious and such a regressive pleasure that it’s allowed sometime anyway…
And how do you expect to have « madeleines de Proust » later if you don’t start by eating them…
For 12 balls
In a bowl, pour the lukewarm milk. While stirring, add the yeast, the salt, the melted butter, the sugar, the egg and the yolk, then the flour all at once.
Mix well then knead on a floured work surface, until dough forms a smooth ball. Put the dough back in the bowl and let rise for one hour. Then cut 12 pieces out of the dough and roll them in your hands to form small balls. Cover with cling film and let them stand again for half an hour.
Bake in boiling oil, turning them regularly, until they are golden brown. Drain on paper towels and let cool. Fill them with raspberry or redcurrant jelly (1 tsp in each using a pastry filler syringe), then roll them into granulated sugar.
