Buddha bowl

As we’re still in January and still trying to get lighter, here is a very simple Buddha bowl that will make you feel zen. Well, of course it’s not a scientific fact, but we believe in ! And anyway, it feels good…

 

For 2 people

  • 250g (8 oz) of cooked quinoa
  • baby greens
  • 1 avocado
  • 4 slices of smoked salmon
  • 1 lemon
  • 2 handfuls of mixed seeds

 

Split the cooked and cooled down quinoa into the bowls. Add the baby greens, the smoked salmon and the avocado cut into pieces.

Drizzle with lemon juice.

Sparkle with the mixed seeds.

Serve with an olive oil dressing.

For example, mix some fresh, finely chopped aromatic herbs of your choice (basil, parsley, sage, chives, oregano…) with 2 tbsp of gomasio, 2 tbsp of cider vinegar, 5 tbsp of olive oil, 1 tbsp of maggi and a pressed garlic clove (germ removed).
