Salmon filet with mango and curcuma, black rice

Les petits bonheurs wish you a very happy New year.

And to start on the right foot and forget about the excesses of holiday season, here are some light recipes, almost weightlessness…

The first one, based on an original idea by my brother…

 

 

For 4 people

  • 4 salmon filets
  • 1 mango
  • 2 tbsp of olive oil
  • curcuma powder
  • fleur de sel
  • black pepper
  • lemon thyme
  • some ground cherries
  • black rice

 

In a bowl, cut the mango into small pieces, add a pinch of fleur de sel and the olive oil. Mix.

Divide the mango on four sheets of baking paper, in the middle. Place the salmon filets on. Sprinkle with the curcuma powder, the black pepper and a pinch of fleur de sel. Wrap each filet in the baking paper and close the foil on both sides. Bake in the oven at 220°C (428°F), for 10 to 20 minutes depending on desired doneness. Arrange with some ground cherries, a small sprig of thyme and serve with black rice.
